A gourmet four-course menu including wine and an aperitif is offered for both vegetarians and non-vegetarians. Sample appetizers include carpaccio of red beets set on an arugula salad, vegetable crepes stuffed with duxelles and tomato coulis, or smoked salmon mousse with its caviar on a bed of guava salad, with a Dijon mustard sauce. A soup course such as pumpkin cream soup with anis and herbs or a vegetarian cream of leeks and potatoes follows. Main courses highlight the talents of the chef with selections including St. Peter fish fillet with tomato concasse on a seasonal vegetable ragout or tofu teriyaki with asparagus tempura and miso sauce. Two amazing dessert courses include choices such as hot chocolate cake and vanilla ice cream or a plum tart Spanish-style with homemade sorbet, followed by petits fours and coffee.
